Cathead's BBQ: Cathead Biscuits

Ingredients: 
2 cups all-purpose flour, plus more for rolling
3 teaspoons baking powder 
1/4 teaspoon kosher salt 
3 tablespoons vegetable shortening 
5 tablespoons cold, unsalted butter, cubed
1 cup buttermilk 
Directions:
To make delicious biscuits, preheat your oven to 400 degrees F. In a large bowl, combine 2 cups of flour, baking powder, and salt. Cut in the shortening and 3 tablespoons of butter until the mixture resembles small peas. Add buttermilk and stir until the dough starts to form a ball. Let it rest in the fridge for 10 to 15 minutes. Next, place the dough on a floured surface, sprinkle with flour, and knead it 3 to 4 times. Don't overwork the dough, or it will become tough and difficult to work with. Flatten the dough into a 3/4 to 1-inch-thick disk with a rolling pin, then cut out biscuits using a large 4 or 5-inch biscuit cutter. Bake the biscuits for about 20 minutes or until golden brown. Melt the remaining 2 tablespoons of butter and brush the hot biscuits with it. Finally, turn on the broiler and broil the biscuits until they reach your desired level of brownness. Enjoy your freshly baked biscuits!
