2 cups all-purpose flour, plus more for rolling
3 teaspoons baking powder
1/4 teaspoon kosher salt
3 tablespoons vegetable shortening
5 tablespoons cold, unsalted butter, cubed
1 cup buttermilk
Directions:
To make delicious biscuits, preheat your oven to 400 degrees F. In a large bowl, combine 2 cups of flour, baking powder, and salt. Cut in the shortening and 3 tablespoons of butter until the mixture resembles small peas. Add buttermilk and stir until the dough starts to form a ball. Let it rest in the fridge for 10 to 15 minutes. Next, place the dough on a floured surface, sprinkle with flour, and knead it 3 to 4 times. Don't overwork the dough, or it will become tough and difficult to work with. Flatten the dough into a 3/4 to 1-inch-thick disk with a rolling pin, then cut out biscuits using a large 4 or 5-inch biscuit cutter. Bake the biscuits for about 20 minutes or until golden brown. Melt the remaining 2 tablespoons of butter and brush the hot biscuits with it. Finally, turn on the broiler and broil the biscuits until they reach your desired level of brownness.
