Virgil’s Real BBQ drives in the crowds and tourists traveling to New York City and Las Vegas. I made some of my Fox Bros. Brisket Chili the other day and wanted to share it with some friends. These friends love to put their chili over cornbread, so I scoured the internet. This recipe popped up immediately. It’s simple, fast and will be a crowd pleaser as I’ve added it to the lineup during backyard cook outs.
A couple things I would like to change or improve with how I make this recipe in the future. I love a good sweet cornbread, that can stand on it’s own (sans chili), so I’ll probably find a way to make this a touch sweeter. I need to find a better baking dish, to make a lower profile as I didn’t follow the directions by using a loaf pan and the cornbread was probably 2.5 in tall. Lastly, during my travels to DFW, I came across Hurtado Barbecue’s cornbread which had very tiny traces of brisket in it. I think that would make this a game changer.
Recipe adapted from Food Network
Ingredients:
1) 1 1/2 C. Yellow Cornmeal
2) 1 2/3 C. Sifted Flour
3) 2/3 C. of Sugar
4) 1 1/2 tsp. of Salt
5) 1 Tbsp. Baking Powder
6) 1 tsp. Baking Soda
7) 8 Tbsp. Melted Butter
8) 1 1/2 C. Buttermilk
9) 1/2 C. Milk
10) 2 Beaten Eggs
11) Hot Sauce (e.g. Tabasco) to taste
12) 4 oz Warm Corn Kernels (Rec: Sweet Corn)
13) 3 oz Grated Cheddar Cheese (Rec: Use shredded cheese)
14) 1/4 C. Chopped Scallions
15) 2 Tbsp. Chopped Cilantro
Directions
Pre-heat Oven or Maintain a Pit temp of 425*F
In a medium bowl combine dry ingredients #1 through #6
In a large bowl mix wet ingredients #7 through #11
Combine dry ingredients with the wet ingredients in the larger bowl.
Warm the Corn Kernels (#12), then add them to the large bowl.
Add Cheddar Cheese (#13), chopped Scallions (#14) and chopped Cilantro (#15) to the large bowl and mix thoroughly.
Pour mix from the large bowl into a buttered pan about 2 inch in depth with an inch of height
Place in the oven/pit for 20 minutes or until the surface has a nice golden crust.
Poke the center with a toothpick and if it comes out clean, then it’s done.
Rest, slice, then enjoy.
