Wright’s Barbecue: Bacon Burnt Ends
Ingredients:
1) 2 lbs. skinless pork belly -Costco is a good source
2) 3/4 cup of your favorite rub (or make Martin’s Bar-B-Que Joint Spice Rub)
Directions
Maintain a Pit temp of 275*F.
Slice pork belly into 1 in. cubes
Coat with rub on all sides and toss onto the smoker. (KC: Placing them onto cooling racks makes the transport process much easier)
Remove once internal temp hits 200*F
