With two locations, Wright’s Barbecue can be found in Johnson and Bentonville, AR. While on the search for a good pork belly burnt end recipe I stumbled onto The Rocket Man. This recipe gave me what I needed to make a simple, yet tasty burnt end recipe. I didn’t have any Wright’s Barbecue Rub on hand so I used Meat Church’s Holy Cow and Holy Gospel. When the internal temp hit about 190*F I decided to glaze half the batch with a a sweet and spicy bbq sauce and then placed them back on till they reached 200* F. Doing that allowed the sauce to caramelize nicely.

Ingredients:

1) 2 lbs. skinless pork belly -Costco is a good source

2) 3/4 cup of your favorite rub (or make Martin’s Bar-B-Que Joint Spice Rub)

Directions

  1. Maintain a Pit temp of 275*F.

  2. Slice pork belly into 1 in. cubes

  3. Coat with rub on all sides and toss onto the smoker. (KC: Placing them onto cooling racks makes the transport process much easier)

  4. Remove once internal temp hits 200*F
