Ingredients: 
1 whole brisket, preferably prime certified Angus beef
Kosher salt and ground black pepper 
Directions: 
To prepare a delicious smoked brisket, start by preheating your offset smoker to 250 degrees F. Trim the brisket and sprinkle it all over with salt and pepper. Place the brisket in the smoker and cook until the meat is "floppy" and reaches a temperature of 200 degrees F all the way through, which can take anywhere from 10 to 18 hours. Once the brisket has reached this temperature, wrap it in butcher paper and continue cooking in the smoker until the internal temperature rises above 200 degrees F, which should take around 2 to 6 hours more. When it's done, remove the brisket from the smoker and let it rest for 1 hour. After that, slice and chop the meat as desired. Enjoy your delicious smoked brisket!
