Snow’s BBQ is known as a little gem located in Lexington, TX about an hour drive outside Austin. People line up the night before just to get a bite of Pitmaster Tootsie Tomanetz’s BBQ. How she came to the BBQ world has been well documented and more recently in episode one of Netflix’s Chef’s Table: BBQ. I definitely recommend it for those interested in the back story of this James Beard Award semifinalist that first led Snow’s BBQ to the #1 spot of Texas Monthly Top 50 list in 2008 and again in 2017. In 2021, they held onto their top 10 standing with a ninth place ranking.

To mop or not to mop? You’d be surprised at how many well-regarded Pitmasters mop their meat. I have a Central Texas BBQ tour planned this Spring and I look forward to comparing Snow’s mop sauce brisket approach to someone like Franklin’s that doesn’t.

Ingredients:

1) 1 onion, julienned

2) 1 1/2 C. water

3) 4 oz. (1 stick) unsalted butter

4) 1/2 C. Worcestershire sauce

5) 1/2 C. white wine vinegar

6) 1 Tbsp. mustard flour (dry mustard)

Directions

  1. Add #1 and #2 to saucepan, bring to boil on high and cook for 20 min.

  2. Add the remaining ingredients #3-#6 and reduce to medium low heat for 45 min or until sauce thickens.
