Make sure it's about 25 to 27 inches away to avoid burning or drying out the chicken. Start by piling the charcoal in a pyramid and igniting it with lighter fluid. Once the top portion has turned white, you can spread the charcoal evenly using a fireproof tool like a metal rake or shovel. Place the chicken on the cooking surface and turn it every 5 minutes with tongs, basting it with sauce each time. For best results, use a clean shaker or squeeze bottle. Grill the chicken for about 1 hour to 1 hour and 15 minutes, adding charcoal if necessary, and be sure not to use lighter fluid. Just sprinkle the new charcoal over the existing.
