Brooks' House of BBQ: Chicken Spiedie

Ingredients:
1 1/2 lbs Boneless Skinless Chicken Breasts
1 16 oz bottle Brook’s Spiedie Marinade
4 Kaiser, Hoagie or Steak Rolls
Butter or Margarine
Directions: To make the most flavorful spiedie sandwiches, start by cutting your chicken breasts into 1/2 to 3/4 inch pieces and placing them in a bowl or ziplock bag. Next, pour Brooks' Spiedie Marinade over the chicken, making sure to completely cover the meat. Mix the chicken and marinade together well, then refrigerate and let marinate for 48 hours. This will bring out the maximum flavor in the chicken.

When you're ready to grill, preheat your grill at high and then turn back to medium to medium high. Place the chicken on the grill and turn it frequently to prevent burning. Cook until done, which should take approximately 7-9 minutes depending on the size of the chicken.

Once the chicken is done, spread some butter on the inside of your steak rolls and grill the insides until they're just crisp. Then, place the chicken on the rolls and enjoy your delicious spiedie sandwiches!
